JUDGING THE KEEPING QUALITY OF MILK BY A Ph METHOD

With constantly increasing milk supply areas for large cities knowledge of how long the milk will keep is important. Bacterial counts, while important for other information, do not give definite answers about this. A hydrogen-ion test may be applied which will afford a reasonable judgment on this point.
